Ingredients


1Kg of veal
1 on neutral gelatin powder
½ avocado in cubes
1 lemon sliced
1 lemon juice
1 Meat pill
3 radishes
2 tablespoons mayonnaise
1 natural yogurt
Chives
Salt and pepper


Preparation


Season the meat and bathe it with oil. Take it to the Air Fryer at 160ºC for 25
30 minutes. Turn and program again 15 minutes. Let stand and cut sheets.

Boil 300ml of water and hydrate the gelatin with 300ml of cold wa ter with
half of the lemon juice. Add the boiled water, stir until dissolved and let cool.

Mix the avocado with half the juice and crush it. Add the yogurt,
mayonnaise, a few chopped scallions, and the shredded tablet and mix well.

On the fillets, spread the cream, roll them up and tie them with some stems of
chives. Place the lemon on a plate, on these rolls and cover with gelatin. Let it
rest in the refrigerator for 2 hours and Serve up.
