Ingredients:
Avocado Egg Rolls
3 avocados halved, pit removed, cubed and copped out
1 Roma tomato
1/4 cup red onion
2 Tbsp cilantro chopped
1 garlic clove minced
2 Tbsp fresh lime juice
8 egg roll wrappers
1 large egg beaten
salt and pepper
Cilantro Honey Dipping Sauce
1/2 cup cilantro chopped
1/4 cup honey
1 1/2 Tbsp apple cider vinegar
1 garlic clove minced
1/2 Tbsp olive oil
1 tsp fresh lime juice
salt and pepper
Directions:

  1. Mix the Ingredients for Cilantro Honey Dipping Sauce and set the
    mixture aside.
  2. Prepare the Avocado Egg Roll by placing avocado, garlic clove,
    Roma tomato, red onion, cilantro, and fresh lime juice in a large bowl.
    Combine them gently. Salt and pepper to taste.
  3. Use the beaten egg and rub it around the edges of the egg roll
    wrapper. Place 1/cup of the avocado mixture in each egg roll wrapper
    and roll, thus sealing the edge.
  4. Use a brush and spread the remaining egg wash on top of egg rolls.
  5. Choose the Air Fry option and set the temperature of the Instant Pot
    Duo Crisp Air Fryer to 400°F. Push start for preheating.
  6. Once preheating is done, spray oil inside of the Instant Pot Duo Crisp
    Air Fryer basket. Place the rolls in the air fryer and cook them for
    around 10 minutes while flipping them halfway.
  7. Remove and allow them to cool. Egg rolls are done when wrappers
    are golden.
  8. Serve egg rolls with Cilantro Honey Dipping Sauce.
