Chicken Empanadas

Ingredients:
2 pounds shredded chicken
Package of chicken taco seasoning (or another seasoning mix of
choice,Frontera Chicken skillet)
1/2 onion diced
1 cup shredded cheese of choice (cheddar)
2 frozen pie crusts, thawed
A dusting of flour (to roll out the crust)
Spray cooking oil of choice (coconut or avocado oil)
garnishes (sour cream, salsa, guacamole)
Directions:
- Push the Air Fry button on the Instant Pot Duo Crisp Air Fryer. Set
the prescribed temperature and push start to begin preheating. - Shred the meat properly
- Take a medium bowl and mix the meat along with onion, sauce, and
cheese - Roll out to each pie crust over the dusting of flour
- Using a ramekin or small bowl to make a circle imprint on the dough
- Cut out the circle finely
- Cut additional circles by re-rolling the dough
- Add a small amount of filling on each circle and fold over to form a
half-circle shape - Pinch or crimp the dough and shut using a fork
- Once the appliance is preheated, add food to the Air Fry tray and
Close the lid. Air fry for around minutes, turning the empanadas half
way though - Garnish with salsa and sour cream and/or guacamole
